Carrot pie

Instructions
- Melt the butter and add it to the flour with the egg yolk, water, cumin seeds and salt. Knead until you form a dough.
- Wrap the dough in plastic film and let it rest in the fridge. (at least 30 minutes)
- In a frying pan, cook the mushrooms without any fat until they released all their water. Remove the water and reserve the mushrooms.
- Heat the oven to 200°C.
- Spread the dough on a pie dish, put dough weights on top and pre-cook in the oven. (15 minutes)
- Cook the onion in olive oil for 5-10 minutes then add the carrots. Add the spices, and after a few minutes add some water and put a lid on the pan. (15 minutes)
- Take the dough out of the oven, remove the pie weights and spread a generous amount of mustard at the bottom. Add the content of the pan then the pre-cooked mushrooms and put sun-dried tomatoes and cheese on top.
- Cook in the oven. (at least 25 minutes)
- Serve with a side salad.
