Eggplant pizzas

Instructions

  1. Cut the aubergine in 1cm thick slices and sprinkle salt on both sides. Let it rest for 30 minutes to draw out moisture, then remove the salt and pat dry. (30 minutes)
  2. Brush olive oil on top and roast in the oven for at least 15 minutes. (15 minutes)
  3. On each slice of aubergine, spread some tomato sauce and add toppings such as sliced mushrooms, sun-dried tomatoes and cheese.
  4. Bake at 200°C until the cheese melts.

Tomato sauce

Ingredients
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 30 mL tomato paste
  • 5 mL rosemary
  • 5 mL thyme
  • 5 mL oregano
  • 5 mL salt
  • 2 canned tomatoes
  • 5 mL sugar
Instructions
  1. Cook the onion in olive oil for 5-10 minutes.
  2. Add the garlic, tomato paste, herbs and salt and heat for 1-2 minutes.
  3. Add the crushed tomatoes and cook on low heat for 15-30 minutes.
  4. Optionally blend the sauce and add sugar.
  5. Adjust taste with salt and pepper.
