Grilled aubergine, halloumi and mint pesto burgers

Instructions

  1. Blend all the ingredients to make the pesto.
  2. Cut the aubergine in 1cm thick slices and sprinkle salt on both sides. Let it rest for 30 minutes to draw out moisture, then remove the salt and pat dry. (30 minutes)
  3. Cut the halloumi in 1cm thick slices.
  4. Fry the aubergine slices and halloumi slices in a frying pan, don't let the cheese melt too much.
  5. Cut the hamburger breads in 2 and toast in a toaster or heat up in a frying pan with butter.
  6. Assemble the burgers with hamburger bread, a generous dose of mint pesto (or regular basil pesto), a slice of halloumi cheese, a slice of aubergine and rucola.

Mint pesto

Ingredients
  • 40 g salted pistachio nuts
  • 30 g mint
  • 50 g olive oil
  • 1 garlic, clove
  • 50 g lime juice
  • 1 lime zest (zest of 1 lime)
  • 25 g parmesan cheese

  1. Blend all the ingredients together.
