Indian Veggie Spiced Mix (Pav Bhaji)

Instructions

  1. Put the potatoes, cauliflower, carrots, peas and tomato in a large pot and add the salt and just enough water to cover. Bring to a boil and cook for 20 minutes with a lid. (20 minutes)
  2. Mash the mix with a potato masher, it should be a bit wetter than mashed potatoes (add a bit of water if needed).
  3. Melt the butter in a frying pan and fry 1.5 onion and cumin seeds for 5-10 minutes. Add the spices, garlic, ginger and bell pepper and fry for a few minutes. (5-10 minutes)
  4. Add the spiced mix to the mashed vegetables. Adjust the taste with salt or spices if needed.
  5. Mix the leftover onion with coriander and lemon juice to taste, and serve this mix on the side of the bhaji with soft buns.
