Indian Veggie Spiced Mix (Pav Bhaji)

Instructions
- Put the potatoes, cauliflower, carrots, peas and tomato in a large pot and add the salt and just enough water to cover. Bring to a boil and cook for 20 minutes with a lid. (20 minutes)
- Mash the mix with a potato masher, it should be a bit wetter than mashed potatoes (add a bit of water if needed).
- Melt the butter in a frying pan and fry 1.5 onion and cumin seeds for 5-10 minutes. Add the spices, garlic, ginger and bell pepper and fry for a few minutes. (5-10 minutes)
- Add the spiced mix to the mashed vegetables. Adjust the taste with salt or spices if needed.
- Mix the leftover onion with coriander and lemon juice to taste, and serve this mix on the side of the bhaji with soft buns.
