Lentil, couscous & roasted veggie salad

Instructions
- Dice all the vegetables, toss with olive oil, salt, thyme and garlic powder and roast at 200C for 40 minutes. (40 minutes)
- Put the couscous in a bowl with 100g of boiling water, cover with a lid and let it sit 10-15 minutes. (10-15 minutes)
- Mix all the dressing ingredients in a bowl.
- Mix the roasted veggies with the lentils and couscous.
- Serve warm or cold with dressing and optional toppings.
