Lentil, couscous & roasted veggie salad

Instructions

  1. Dice all the vegetables, toss with olive oil, salt, thyme and garlic powder and roast at 200C for 40 minutes. (40 minutes)
  2. Put the couscous in a bowl with 100g of boiling water, cover with a lid and let it sit 10-15 minutes. (10-15 minutes)
  3. Mix all the dressing ingredients in a bowl.
  4. Mix the roasted veggies with the lentils and couscous.
  5. Serve warm or cold with dressing and optional toppings.

  • 50 g olive oil
  • 20 g lemon juice
  • 20 g honey
  • 20 g mustard
