Lentil smashburger tacos

Instructions

  1. Finely chop the veggies and cook in a pan with some salt until all the moisture is drawn out. Set aside.
  2. Blend or finely chop the oats and mix all ingredients in a bowl.
  3. Form patties and put on a tortilla. Fry in a pan patty side down for a few minutes, then flip and add cheese on the patty. Cook for a few minutes with a lid on until the cheese has melted.
  4. Serve with burger sauce and optional toppings (diced tomato, onion etc).

Ingredients
  • 60 mL mayo
  • 45 mL ketchup
  • 15 mL mustard
  • 30 mL pickles, finely chopped
  • lemon juice (squeeze)
