Ratatouille pie

Instructions

  1. Melt the butter and add it to the flour with the egg yolk, water, cumin seeds and salt. Knead until you form a dough.
  2. Wrap the dough in plastic film and let it rest in the fridge for at least 30 minutes. (30 minutes)
  3. Heat the oven to 200°C.
  4. Spread the dough on a pie dish, put dough weights on top and pre-cook in the oven for 15 minutes. (15 minutes)
  5. Mix the cream cheese with mustard, salt and pepper to taste.
  6. Take the dough out of the oven, remove the pie weights and spread the cream cheese mix at the bottom. Add the ratatouille then cheese on top.
  7. Cook in the oven for at least 25 minutes. (25 minutes)

Ratatouille

Ingredients
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 yellow onion, diced (big)
  • 1 red paprika, diced
  • 2 garlic cloves, minced (big)
  • 3 tomatoes, diced (big, or 1 can)
  • 1 laurier leaf
  • 10 mL dried italian herbs
  • 5 mL salt
  • black pepper (to taste)
Instructions
  1. Cook the eggplant in a large pan without any fat to release as much moisture as possible, adding some salt helps. After the 5 minutes, add some olive oil and cook for another 5 minutes then reserve.
  2. Add some olive oil and cook the zucchini for 5 minutes then reserve.
  3. Add some olive oil and cook the onion and paprika for 5-10 minutes. Add the garlic and stir for 1 minute.
  4. Add all the other ingredients and cook for at least 30 minutes.

Pie dough

Ingredients
  • 200 g flour
  • 100 g butter
  • 1 egg yolk
  • 50 mL water
  • 1.3 mL garlic powder
  • 2.5 mL salt
  • 100 g cream cheese (approximate quantity)
