Roasted aubergines with curried yogurt

Instructions

  1. Cut the aubergine in 1-2 cm thick slices, brush with oil on both sides, add salt and pepper and roast at 200°C. (40 minutes)
  2. Mix the yogurt with 5 mL of curry powder, the turmeric, 15 mL of lime juice and salt and pepper.
  3. Cook the onion in olive oil in a frying pan for 10 minutes. Add the other 5 mL of curry powder, almonds and salt and fry another 2 minutes. (12 minutes)
  4. Serve the aubergine slices with the yogurt sauce, the onion mix, the seeds and lime zest.
