Tandoori roasted carrots

Instructions

  1. Mix all the spices for the tandoori rub and store in an air-tight container.
  2. Cut the carrots in long strips.
  3. Mix the 2 tbsp of spices with 1 clove of garlic, half the yoghurt and the olive oil in a big bowl.
  4. Add the carrots and toss well until the strips are well coated.
  5. Roast at 200C in a single layer for 30 minutes. (30 minutes)
  6. Mix the lemon juice with the other clove of garlic, the other half of the yoghurt and salt and pepper to make a sauce.
  7. Serve the carrots with the sauce and fresh coriander.

Ingredients
  • 45 mL smoked paprika
  • 15 mL ground coriander
  • 15 mL ground cumin
  • 10 mL garlic powder
  • 10 mL brown sugar
  • 10 mL ground ginger
  • 5 mL salt
  • 5 mL turmeric
  • 5 mL black pepper
